Making Greek Coffee

Upon arrival at our villa by the sea, we discovered there was no coffee make so the hotelier went out and bought several coffee makers for us. We had purchased coffee in Mytillini before driving to our new home in Vatera, so all we needed was a coffee maker, I made sure the coffee was ground so we would not have to go through the pain, suffering and torment of trying to find a coffee grinder. Our villa is equipped with a kitchenette so we can save money by preparing our meals instead of eating out, which we realized was a necessity since there are no restaurants open with a 10 km radius. However upon closer inspection I found a Greek/Turkish coffee maker in the pantry so we really did not need a fancy coffee maker. We learned to make coffee from the nice vendor in the Istanbul Grand Bazaar; he was an assistant to a general in the army and learned how to make "the best coffee" for the general.

It is pretty simple, first place on scoop of coffee grounds (the grounds are very fine, like powder) in the coffee maker and one cup of water, then boil on the stove until the coffee froths, remove, let cool, boil again, let cool and then one final frothing it is ready to pour. The key to judging good coffee is by the amount of sludge left in the bottom of the cup, the more sludge, the better the coffee. Even the stove is set up specially for the coffee maker, see the attached is a photo. We purchased a coffee maker in Istanbul so we can make Greek coffee when we get home.
